Three Salento PGI wines from our vineyard in San Vito dei Normanni, in Alto Salento: a white, a rosé and a red. We make them the way we do everything at Tatamà: respecting the rhythms of nature and the varieties of our land.

The Tatamà vineyard
Alongside our centuries-old olive trees and fields of ancient grains, we grow vines. Our work in the vineyard follows the same idea of resilient agriculture that guides the whole farm: living soil, organic fertilisers, nothing forced.
From grapes typical of Apulia – Negroamaro, Malvasia, Verdeca and Bianco d’Alessano – come wines that tell of the sun, the stone and the wind of this land.
Chianca, Nina and Vitù
Chianca – Salento PGI White
From Verdeca and Bianco d’Alessano grapes of the Itria Valley. Fresh and savoury, it is named after the chianca, the Apulian limestone. 12% ABV, serve at 8–10 °C. Perfect with seafood, vegetables and frise.
Nina – Salento PGI Rosé
From Negroamaro and Malvasia. Fragrant and fresh, it is the wine of summer evenings. 12.5% ABV, serve at 10–12 °C. Great as an aperitif, with pizza and tomato-based pasta.
Vitù – Salento PGI Red
From Negroamaro and Malvasia. Warm and enveloping, with the character of the Salento land. 13% ABV. Pair with orecchiette with ragù, grilled meats and aged cheeses.

Wine with Apulian cuisine
A good wine is at its best at the table. We have gathered our favourite pairings, dish by dish, in the blog article Chianca, Nina and Vitù: Salento PGI wines and Apulian cuisine.
And to complete the table: our ancient grain frise and taralli and our organic PGI extra virgin olive oil.
